WhazUp
Billy Joel. It helps that Howard Stern is interviewing him and he has a piano to jam on in the studio randomly. This is one of the most insightful interviews I have heard, Howard asks great questions and is a strong interviewer. Whenever a interviewer and a interviewee have a great chemistry it is magicalhttp://www.youtube.com/watch?v=Dxw1WV_qmVkIts 5 or 6 parts so just follow it on youtube, you wont regret it!!! RocketQueen1985
Courtney Love. I could post a video, but really all her interviews are pretty cool. I mean, they're never boring!
GivenToFly
I like rockstars to be arrogant, but the Gallagher brothers are way too arrogant given how meh their band is.

dalsh327
Depends on what type of interview you're talking about. I think athletes are the most unpredictable as well as their coaches. Neil Strauss just wrote a book about most of the people he's interviewed, some of which were never printed before, and Eddie Trunk had his favorites like Halford and Dio. Some people treat an interview like a performance more than a Q&A.
